Try this:
Pre heat oven to 180 or there abouts
Cut fillet into pieces about 2-3 ins long, season and then put into a baking dish. Sprinkle lemon or lime juice over the fish and leave for 20 mins.

Meantime chop up onion, a chilli or 2 and some garlic. Fry until soft.

Spoon onion mixture on,under and around fish pieces, sprinkle corriander leaf over the fiah. Bake until cooked through - lovely!!

After Skinning freeze the Fillets for a week as this gets rid of the ammonia and cover in Bread Crumbs and Fry.Myself i like Dogfish but no longer eat them as too much hard work getting to the final result..

or try them steaked,by taking out the central cartiliage, make a batter from self-raising flour and ice cold water, until it resembles double cream, add some chilli flakes to batter or any other flavourings(some sugar helps here),and deep fry .
