hi,

how do you guys cook mullet?

does anybody soak the fillets in milk? apparently it helps to remove some weed flavour that is in some algae / weed eating fish?

Mullet is a nice fish however they are "S*it" eaters so beware when gutting them to make sure you DO NOT pierce the stomach and digestive tract cos it will taint the fish with a nice layer of probably human excrement..lol..
After that you can pretty much do anything with mullet...very under rated and under eaten. I would certainly Steam the fish with some nice steamed Veg and a few Jersey royals...or go the whole hog and cook it ALL in parchment paper (En Pappiotte:Its a laborious process that really does taste good..Pm me if you want the recipe anyone).
