Most fish are good to eat. Best to learn about the one or two which are not worth bothering with:
Most of us put back small fish as a matter of good sportsmanship.
Flounders, pouting, smoothounds (especially females which taste awful), rockling and wrasse are generally not worth bothering with and I always return them. I have some doubts about pollack too which never seem to have much taste to me although some people eat them.
Best eating fish are bass, cod, dabs, dogfish (if you can get them big enough), plaice, sole, bream, gurnard and of course mackerel and herring. A visit to a good fishmonger to see what he sells is usually a pretty good guide.
Also it is good idea to let anything you catch and take home to "rest" in the bottom of the fridge for at least 24 hours as this practice often improves the flavour.

Hi ollie and welcome, as with all food it is a matter of personal taste .Some people will tell you all fish tastes awful and it is wrong to eat it A lot of people like to eat smoothound , pout and flounder , a large pout is good if eaten fresh and flounder are best if caught off a clean beach.
The average british fishmonger (if you can find one) is still fairly limited in choice so if you get a chance have a look around a fish market and for a real eye opener a french or spanish market.
Top 3 for me from the fish i catch, mackeral, gurnard, dabs but i like and will eat most.
The flounders down this way seem to be having hard times so they are `off the menu' at the moment. sniggle
