hopefully if we get a half decent summer,i was looking to fire up the BBQ, i have some nice big bass fillets in my freezer (good season last year),i would like to wrap them in tin foil and cook them,now what other herbs etc.. would some of you recomend? i know its good to keep it simple,knob of butter bit of garlic and ginger,but i was looking for other ideas. thanks

slice of lemon, some fennel, salt and pepper.

if you like it hot try some butter salt pepper and a scotch bonnet chilli.

i can get roughly about 4 good portions from each fillet,so will try a multitude of differing recipes,i like the sound of lemon and fennel (i take it you mean the vegetable and not the seeds?),hmm the chilli sounds good.

getting some good ideas now guys cheers

Try this one, you'll love it!

Score each side of the fillet with diagonal cuts (5-6 each side)

Crush 2-3 large stems of lemon grass and lay on foil and place the fillet on top. Add some Garlic, Ginger, Thai or birdseye chillies and a little soy sauce.
Wrap up the foil into a parcel and slap on the Barbie until cooked.

Eat with boiled rice and a little fresh corriander and enjoy with copious ammounts of Singha, Beer Chang or Elephant !!!!!
