Scrub the shells clean, remove/ pick off the beard and steam/boil for 11-15 minutes. Stubborn beards can be removed after you cook them.Hot butter-enjoy

Use an old round ended butter knife - NOT a sharp one!
Pull off the beard.
Hold the mussel in the palm of your left hand, and slide the knife along the hinge side towards the rounded end.
Just as it goes into the shell, tilt the knife so it scrapes the foot off the top half of the shell.
Open the shell, scrape the bottom foot off, and slide the mussel out.

Sprinkling the mussels with salt and leaving them draining on a fine mesh covered bowl overnight toughens them up a bit.

'hope it helps

I use loads of mussel for bait, I find the easiest way to shell them by far is to put 8 or 9 in a sieve and pour boiling water over them for about 5 seconds , they will then open there shells a bit and you can simply open each shell wide and they will all but fall out in one piece and are still raw. I usually then fill plastic take away trays with them and freeze. hope this helps mate.
Cheers Steve
